Tasting Note
Intense black fruits (blackberry, plum), violets and graphite; peppery spice, espresso and orange-peel notes. Full-bodied with firm stony tannins, lively acidity and a long mineral finish.

Grilled steak, roasted lamb, beef empanadas, aged cheeses (Manchego); Asian: Korean BBQ (bulgogi), char siu, Sichuan-style beef, teriyaki beef, yakitori.

Production Method
Hand-harvested with cluster selection; native-yeast fermentation in concrete vats; ~20-day maceration with delestage and pigeage; aged ~24 months in large oak foudres; bottled unfiltered.
