Intense blackberry and blueberry fruit with violet, black-licorice and black-olive notes; pronounced wet-stone/graphite minerality, chalky saline texture, firm chewy tannins and a very long finish.

Grilled steak, roasted lamb, braised short ribs; Asian: Korean BBQ (galbi/bulgogi), spicy Sichuan beef, char siu or grilled yakitori.

Production Method
Hand-harvested; destemmed; native-yeast fermentation in concrete vats; approx. 30–50% aged ~12 months in 500L used oak barrels; remainder aged in concrete.
