Tasting Note

Deep violet; aromas of violets, blueberries, black cherry and blood-orange with herbal and wet-stone minerality. Silky entry, lively acidity, fine chalky tannins and saline minerality; concentrated, precise and long on the finish.

Western: grilled or roast lamb, ribeye/steak, roast pork, charcuterie, aged cheeses. Asian: Korean BBQ, bulgogi, Chinese/Sichuan spicy beef, char siu, miso-glazed eggplant.


Production Method

100% Malbec from Altamira. Gravity grape movement, native-yeast fermentation in concrete vats, 20–25 day maceration, partial whole-cluster use; aged in used oak and concrete, bottled unfiltered.
