Tasting Note

Deep red with violet hues. Ripe dark cherry, plum and strawberry with floral and herbal notes, wet-stone and graphite minerality; silky entry, lively acidity, chalky structured tannins and a long savory finish.

Western: grilled ribeye, lamb chops, beef empanadas, aged cheddar. Asian: Korean BBQ (bulgogi), char siu or hoisin-glazed pork, Szechuan beef, umami mushroom stir-fries.


Production Method

Gravity-fed harvest; fermentation in concrete vats with native yeasts, 20–25 day maceration; aged in oak barrels and concrete, bottled unfiltered.
