Tasting Note
Pale yellow. Mineral-driven citrus, wet stones and morning-dew aromatics. Sharp, elegant and lacy on the palate with saline, salivating acidity and a dry, crisp finish showing focused tension and precision.

Food Pairing
Western: grilled shellfish (shrimp/scallops), roasted chicken, pork belly, goat cheese, creamy pasta. Asian: sushi/sashimi, steamed fish with ginger & scallion, Thai green curry, Vietnamese spring rolls, mildly spicy Sichuan dishes.

Production Method
Certified organic/biodynamic. Fermented for ~12+ months in large foudres, malolactic fermentation carried out; bottled January 2023. Low yields from gravelly/alluvial soils.
