Tasting Note
Pale gold; tight citrus and white stone fruit with stony/mineral reduction. Very dry, saline texture, racy acidity and a long, salivating finish. Decant when young; gains petrol and complex mineral layers with age.

Food Pairing
Western: grilled sea bass, scallops, roast chicken with herbs, goat cheese, pork with citrus. Asian: sushi/sashimi, tempura, grilled eel (unagi), Thai green curry, Vietnamese spring rolls.

Production Method
Certified organic & biodynamic farming; manual harvest; slow wild fermentations; ~18 months on full lees in large oak foudres; bottled February 2021.
