Tasting Note
Lemon-yellow; fine, terroir-driven nose of citrus and toasted lees. Delicate attack, creamy mid-palate and bright chalky acidity. Lightly off-dry with barely perceptible sugar and a pure, straight finish showing stone-fruit, grilled-yeast and mineral hints.

Seafood risotto, grilled scallops, roasted prawns; seared white fish, roast chicken, pork with apple; Asian: sushi/sashimi, Thai coconut chicken, mild curry, dim sum or lightly spiced noodle dishes.

Production Method
Biodynamic viticulture, hand-harvested; slow fermentation with a touch of residual sugar; long aging on fine lees and minimal cellar intervention.
