Tasting Note
Old-gold colour; candied apricot, marmalade and honeyed pineapple with smoky/iodine minerality and warm spice. Viscous, subtly sweet yet bright, with concentrated fruit, saline minerality and a very long, complex finish.
Food Pairing
Western: foie gras, braised chicory with caramelised nuts, smoked stockfish with dried apricots, roasted/pork belly, aged Munster or Comté. Asian: Peking duck, char‑siu pork, soy‑glazed pork belly, spiced Thai curries, braised duck with five‑spice.
Production Method
Hand-harvested with selective picks; 2001 had botrytis with a selection for SGN and other lots used for this bottling. Estate practices biodynamic viticulture; fermented and matured in neutral oak and/or stainless tanks.
