Tasting Note
Intense amber-straw colour; exotic fruits, pear and apricot with white-truffle, humus and smoky/botrytis spice. Powerful, long and structured—appears only moderately sweet due to lively acidity and mineral backbone.

Western: foie gras, blue cheese (Roquefort), roast pork, creamy poultry or rich pasta. Asian: Peking roast duck, miso-glazed salmon, rich Thai curry, Cantonese roast meats.
Production Method
Vendange Tardive (late-harvest) from hand-picked, rigorously sorted fruit; native-yeast fermentation; bottled Sept 2001. Botrytised bunches were largely removed to retain balance.
