Tasting Note

Pale yellow; citrus and pear with pronounced limestone minerality, tight, firm mouthfeel, ripe acidity, subtle gingerbread spice and a long, intense dry finish with a hint of noble bitterness. Ageworthy.


Food Pairing

Western: foie gras, roasted pork, roasted chicken, mushroom risotto, aged Comté or Gruyère. Asian: miso‑glazed cod, sea urchin (uni), shrimp udon, sashimi, mild Thai coconut curry.


Production Method

Organically/biodynamically farmed; hand-harvested; fermented fully dry with natural malolactic fermentation; aged ~12 months in large oak foudres.
