Tasting Note

Bone-dry and intense: pear, dried apricot, orange peel, smoky/flinty minerality and saline notes. Broad, concentrated palate with russet-pear texture, bright acidity and a long, strict stony finish.

Western: foie gras with apricot, roasted pork belly, roasted poultry, mushroom risotto, aged Comté; Asian: miso-glazed black cod, Peking duck, grilled lemongrass chicken, Thai coconut curry, sushi/sashimi (fatty fish).


Production Method

Biodynamic viticulture; hand-harvested; fermented dry on indigenous yeasts with malolactic fermentation; aged in large oak foudres (~12 months); minimal sulfur.
