Tasting Note
Pronounced lychee, mango, rose petal and jasmine with blood-orange and ginger spice. Full-bodied and unctuous yet vibrant acidity, honeyed candied-fruit sweetness balanced by fine phenolic grip and a long, intense mineral finish.
Food Pairing
Foie gras, roast pork, roast chicken with cream sauce, Munster or Comté cheese; spicy Asian dishes such as Thai green curry, Szechuan chicken, Indian curry; smoked salmon, rich vegetable tagines.
Production Method
Hand-harvested from old vines; fermented with indigenous yeasts; natural malolactic fermentation; aged in large neutral oak casks/foudres with minimal fining. Estate practices are organic/biodynamic.
