Bright yellow-gold. Jasmine, wildflowers, rose and green-tea on the nose; mirabelle, orange zest, kumquat and warm spice on the palate. Off-dry sugar is balanced by vivid acidity and saline minerality, delivering energetic drive and a very long finish.
Food Pairing
Foie gras, roasted pork or charcuterie (western); rich seafood, spicy Szechuan or Thai curry, aromatic Indian dishes, fermented/umami Asian sauces and aged cheeses (western) — pairs with sweet-spicy and savory flavors.
Production Method
Biodynamic viticulture; slow, native-yeast fermentation that stopped/started leaving ~23.7 g/L residual sugar; matured in older French oak/ageing in cellar, bottled Aug 2023.
