Tasting Note
Intense golden Gewurztraminer: crushed rock, dry herbs and oregano framed by lychee, candied citrus and subtle spice. Rich, silky palate with concentrated sweet fruit balanced by bright acidity and a long, mineral finish.
Food Pairing
Foie gras, blue cheese, roast pork or duck (western); Cantonese lacquered pork belly with pak choi, spicy Thai or Szechuan dishes, rich sushi (unagi), and Indian dishes with sweet–spicy sauces.
Production Method
Biodynamically farmed; very late harvest. Fermented very slowly (~6 months) with indigenous yeasts, leaving high residual sugar (70.7 g/L). Bottled Aug 2016; designed for long ageing.
