Tasting Note

Delicate floral aroma with pear and melon notes, steamed rice umami, smooth mellow sweetness, lively acidity and a crisp, slightly savory finish.


Food Pairing

Western: grilled fish, salads, burrata with tomatoes, wild mushroom tart, spaghetti vongole. Asian: sashimi, sushi, tempura, firefly squid with vinegared miso, yakitori, grilled vegetables.


Production Method

Junmai Ginjo: rice polished to ~60%, small-batch low-temperature fermentation with koji; no added brewing alcohol.

Shimizu Seizaburo Shoten (est. 1869), producer of the Zaku brand in Suzuka; known for pure Suzuka Mountains water and small-batch, food-friendly sakes.
