Tasting Note

Elegant, silky texture with floral (lilac/honeysuckle) and ripe pear, melon and green apple notes; subtle vanilla/almond, light rice umami and a clean, persistent finish.

Production Method

Junmai Daiginjo brewed from Yamada Nishiki polished to ~50%; only the ‘nakadori’ (middle) press used. Natural fermentation, no added distilled alcohol; often lightly aged.
