Tasting Note
Perfumed cool‑climate Shiraz: bright boysenberry and black plum, violets, aniseed and cured‑meat/smoke notes. Medium-bodied with fine, silky tannins, savory spice and a long, refined finish.
Food Pairing
Western: grilled lamb chops, beef stew, roast duck, mushroom ragout. Asian: char siu (Cantonese BBQ pork), Korean BBQ (bulgogi), hoisin duck, spicy Sichuan dishes or miso‑glazed aubergine.
Production Method
Hand‑harvested, sorted and destemmed with whole berries retained; component of whole‑bunch fermentation; fermented in half‑tonne open fermenters, air‑bag pressed, aged 12 months in 500L French oak puncheons (≈25% new).
Vineyard Info
Yarra Yering, established 1969 by Dr Bailey Carrodus, farms old, unirrigated vines on silty loam in Gruyere. Underhill is a single vineyard block planted in 1973 producing low‑yield, high‑intensity Shiraz.
