Tasting Note
Perfumed cool-climate Shiraz: bright boysenberry and red plum, violet and anise spice, with cured-meat/smoke and subtle oak. Elegant, medium-bodied, fine-grained tannins and a long, refined, spicy finish.
Food Pairing
Western: grilled lamb chops, beef stew, roast pork, mature cheddar. Asian: char siu or Cantonese roast pork, Korean BBQ (bulgogi), beef rendang, Sichuan-style braised beef.
Production Method
Hand-harvested, sorted and destemmed retaining whole berries; fermentations in half-tonne open fermenters with whole-bunch inclusion; air-bag pressed and aged ~12 months in 500L French oak puncheons (c.25–30% new).
