Tasting Note
Perfumed cool-climate Shiraz: dark cherries, red plums, black pepper, violet, cured-meat and licorice; medium-bodied, finely-boned tannins and bright acidity with a long, savory oak-tinged finish.

Western: grilled lamb, roast beef, duck with cherry sauce, mushroom risotto. Asian: Korean BBQ, Chinese braised beef (char siu), spicy Sichuan beef, Indonesian beef rendang.
Production Method
Hand-harvested from old 1973 plantings; 75% whole-berry/25% whole-bunch, open half-tonne fermenters with hand plunging, some whole-bunch fermentation, 10–14 days on skins, matured ~12 months in French oak puncheons/barriques (≈25–30% new).

Yarra Yering, founded 1969 by Dr. Bailey Carrodus. Underhill is an 8-acre Shiraz block planted in 1973 at the western extremity of the estate, producing cool-climate, ageworthy Shiraz.
