Tasting Note

Bright crimson; violets, rose petal and ripe black cherry with a faint smoky char. Silky, fleshy cherry palate with aniseed/licorice spice, fine tannins and elegant, medium-bodied power.

Roast duck, seared tuna or salmon, mushroom risotto, roast chicken; Asian: Peking duck, miso‑glazed salmon, char siu, teriyaki dishes, grilled shiitake or Korean barbecue (bulgogi).


Production Method

Hand‑picked, chilled overnight, sorted, gentle destemming with some whole‑bunch; hand‑plunged twice daily, minimal extraction; pressed and matured ~10 months in French oak (≈30% new).
