Tasting Note

Bright crimson; aromas of violets, red cherry, raspberry and rose petal with subtle forest-floor and anise spice. Silky, medium-bodied palate with fine tannins, lively acidity and a savory, lingering finish.

Western: roast duck, mushroom risotto, grilled salmon, herb‑crusted lamb. Asian: miso‑glazed black cod, char siu pork, shiitake and tofu stir‑fry, Cantonese roast pork, mushroom hot pot.


Production Method

Hand‑picked, chilled overnight, sorted and gently destemmed into small fermenters with ~10% whole‑bunch; hand‑plunged, minimal extraction; pressed and matured ~10 months in French oak (c.30% new).
