Tasting Note
Bright crimson; aromas of red cherry, violets, campari and cured meat. Palate shows dominant red cherry, a pinch of Chinese five-spice, silky texture, fine tannins and a persistent, elegant medium-to-full finish.
Food Pairing
Roast duck, mushroom risotto, lamb or pork loin (Western); miso-glazed black cod, hoisin/Peking duck, char siu pork, and shiitake ramen (Asian).
Production Method
Hand-harvested, chilled overnight, gently destemmed (some whole-bunch inclusion). Fermented in small fermenters with gentle hand-plunging, pressed off and matured ~10 months in French oak (30% new).
