Tasting Note

Perfumed violets, plum and red/blue fruits with savoury five‑spice, cardamom and cigar‑box notes; medium-bodied, fresh acidity, fine firm tannins and a long, precise finish.


Food Pairing

Roast lamb, grilled beef, duck confit, braised short ribs; Asian: Peking duck, char siu, Korean BBQ, hoisin‑glazed pork, mildly spicy Sichuan or Cantonese roasted dishes.


Production Method

Hand‑picked, sorted and destemmed to half‑tonne open fermenters; retain whole berries; frozen Viognier (and some Marsanne) skins added to portions; matured 12–15 months in French oak barriques (≈30% new).


Vineyard Info

Founded 1969 by Dr Bailey Carrodus; historic vineyard in Gruyere on north‑facing Warramate foothills slopes. Now ~90 acres; Sarah Crowe is the modern winemaker continuing the site‑driven philosophy.
