Tasting Note
Fragrant and layered: violets, plum and bramble with cardamom, cigar-box oak and savoury spice. Medium weight, smooth-skinned fruit, firm fine tannins and a savoury finish.

Roast and grilled red meats (beef, lamb), braised short ribs, aged cheddar, mushroom risotto; Asian: Korean BBQ, char siu, hoisin duck, spicy Sichuan beef, teriyaki‑glazed dishes.
Production Method
Hand‑harvested; sorted and destemmed to half‑tonne open fermenters with much whole‑berry; some stalk returned; frozen Viognier (and some Marsanne) skins added to fermenters; matured ~12 months in French oak barriques (30% new).
