Violets, lavender, boysenberry and blackcurrant with Szechuan pepper, cardamom and blackstrap licorice; mocha and savoury charcuterie notes. Medium-bodied, bright raspberry-like acidity, fine tannins and a long herb-tinged finish.
Food Pairing
Western: grilled lamb, charcuterie, slow-braised beef, mushroom risotto. Asian: Peking duck, char siu/roast pork, Sichuan-style spicy dishes, Korean BBQ.
Production Method
Field blend from 1990 plantings; hand-harvested, destemmed with whole berries preserved; initial foot-treading/lagar-style extraction and open fermenters, matured ~10 months in seasoned French oak.
