Tasting Note
Bright crimson-purple. Core blackcurrant, boysenberry and blackberry with cardamom, coriander seed, black tea and tobacco; cool cassis, layered spice, chalky, fine-grained tannins and a long, persistent finish.

Grilled ribeye, roast lamb, beef stew, aged cheddar; Chinese red-braised beef, Peking duck, Korean BBQ, Malaysian beef rendang.
Production Method
Cabernet destemmed and crushed; Merlot, Malbec and Petit Verdot fermented as whole berries in small open fermenters, hand-plunged; matured ~15 months in French oak (40% new) and blended before bottling.

Established 1969 by Dr Bailey Carrodus at Coldstream; dry‑farmed, low-yield vines on gravel/clay loams. Sarah Crowe is current winemaker; estate known for terroir-driven, ageworthy Cabernet blends.
