Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: char siu, Korean BBQ (bulgogi), Peking duck, Indonesian beef rendang, miso-grilled aubergine.
Production Method
Hand-harvested fruit, de-stemmed, open-top/half-tonne fermenters with gentle hand plunging; extended maceration and maturation in French Bordeaux-shaped oak barrels.
