Tasting Note
Perfumed cool-climate Shiraz: lifted black cherry, blueberry and violet aromatics with anise, cedar and cured‑meat savouriness; silky texture, fine chalky tannins and a long, focused finish.
Food Pairing
Western: roast lamb, grilled ribeye, beef bourguignon, aged cheddar. Asian: char siu or Cantonese roast pork, Korean BBQ (galbi), Sichuan beef, Malaysian lamb rendang.
Production Method
Fermented and partly matured in a new 3,500L French oak foudre (used for both fermentation and aging) with ~20% whole‑bunch/whole‑berry inclusion; remaining lots aged in 500L French puncheons. Approximately 12 months maturation.
