Tasting Note

Perfumed bramble and blackcurrant with mulberry, redcurrant and clove spice; leafy herbal lift, plush soft tannins and vibrant acidity, finishing clean and assured.

Grilled ribeye or lamb, aged cheddar or blue cheese; western mushroom/blue‑cheese burger. Asian: Korean BBQ (bulgogi), Chinese roasted duck, Cantonese char siu, Sichuan‑style beef.


Production Method

Hand‑harvested; destemmed/crushed to open fermenters, gentle cap management, basket‑pressed, MLF, matured ~18 months in French (Bordeaux) oak barrels (low % new).
