Tasting Note

Perfumed cabernet with cassis, mulberry and dark plum, violet florals, nettle/herb lift, clove and mocha spice, fresh leather and balanced, fine-grained tannins to a medium-long finish.

Grilled or roasted lamb, ribeye/steak, beef brisket, aged cheddar; Asian: Korean BBQ (bulgogi), char siu, Peking duck, Sichuan-style lamb, mushroom hotpot.


Production Method

Hand-harvested; destemmed/crushed into 0.5-ton open fermenters, hand-plunged; some whole-bunch; basket-pressed; malolactic fermentation and 15–18 months in French Bordeaux-shaped barrels (≈15% new oak).

Fruit from the Agincourt block: Cabernet planted 1995, Malbec planted 1990. Sheltered eastern block on grey silty-loam with gravel; unirrigated, low-yield, focused on perfume and concentration. Producer: Yarra Yering, iconic Yarra Valley estate.
