Tasting Note

Golden Chardonnay with yellow plum, citrus peel, beeswax, honey and dried stone-fruit. Mineral-driven, round yet tensile, with gentle oak, saline minerality and a long, refined finish.

Roast chicken, butter-poached lobster, creamy pasta (western); miso-glazed cod, grilled scallops, tempura, sushi with salmon or toro, Cantonese roasted pork (asian).


Production Method

Hand-harvested, direct-pressed; spontaneous/native fermentations, aged ~24 months in (mostly used) oak barrels; minimal intervention, no added SO2, unfined and unfiltered.

Yann Durieux (Recrue des Sens) is a small biodynamic producer from Burgundy who worked at Prieuré-Roch; estate ~2–3 ha, focused on low-intervention, natural winemaking since ~2010.
