Tasting Note
Fresh red cherry and wild raspberry, subtle spice, crushed-stone minerality, bright acidity and silky texture; precise, unoaked, light-to-medium bodied.

Food Pairing
Western: roast chicken, charcuterie, mushroom risotto, pork loin, salmon. Asian: Peking/hoisin duck, teriyaki salmon, grilled pork belly, mushroom gyoza, miso-glazed eggplant.

Production Method
100% whole-bunch fermentation on native yeasts with ~1 month maceration and gentle foot pigeage; aged in tank (approx. 12–18 months), minimal-intervention, organic/biodynamic practices.
