Deep, savory Pinot Noir: black and red cherry, wild strawberry, forest floor and baking spice, with silky texture, bright acidity and a savory, mineral finish.

Western: roast lamb, duck breast, mushroom risotto, charcuterie, coq au vin. Asian: Peking duck, miso-glazed salmon, soy-glazed pork belly, shiitake soba or teriyaki dishes.


Production Method

Biodynamic/organic farming; whole-cluster fermentation with ~30 days maceration, native yeasts, aged in old oak vats and barrels; minimal or no added SO2.
