Tasting Note

Blackberry and plum core with peppery spice, savoury olive and subtle mushroom/developed notes; cocoa/vanilla from French oak, fine-grained tannins, bright acidity and a long savoury finish.


Food Pairing

Western: grilled lamb chops, roast beef, BBQ brisket, hard cheeses. Asian: char siu (BBQ pork), Korean BBQ (bulgogi/galbi), Sichuan-style beef, Malaysian satay, yakitori.


Production Method

Estate fruit; ~50% whole-berry/whole-bunch inclusion, cold-soak and wild-yeast open-top fermentation; matured in French oak (mix of older and some new) for c.10–17 months; minimal intervention, biodynamic practices.
