Tasting Note

Perfumed and expressive: saturated plum, black cherry and damson with five-spice, soy-sauce savouriness, smoky musky oak, dark chocolate and black pepper. Meaty, savory mid-palate, firm tannins and a long, savory finish.


Food Pairing

Western: grilled or roasted lamb, beef short ribs, peppered steak, braised brisket, aged cheddar. Asian: Korean BBQ, char siu, Szechuan beef, hoisin-glazed duck, spicy mala or satay-style dishes.


Production Method

Biodynamic estate fruit, hand-harvested; wild/native yeast fermentation with gentle maceration; matured in French oak (predominantly older barrels); minimal intervention, light filtration.
