Perfumed red and dark berry fruits with spice, ironstone minerality and subtle oak. Silky texture, bright natural acidity and a long, succulent finish with fine, integrated tannins.

Roast lamb, grilled steak, BBQ ribs, mushroom risotto; Asian: char siu pork, Korean BBQ, spicy Szechuan beef, miso‑glazed eggplant.

Production Method
Sourced from six estate blocks; destemmed and sorted with ~50% whole berries. Wild-yeast open ferment, 14–20 days on skins, no pressings. Aged on lees in French oak puncheons (25% new) for 12 months.
