Tasting Note
Savory, textured Roussanne with nashi pear, daikon, chamomile, fennel and white-pepper notes; mid-weight palate with mineral drive, skin-derived grip and dried-citrus complexity. Ages well, gaining savoury, nutty and herbal nuances.
Food Pairing
Western: roast chicken, pork belly, creamy pasta, mushroom risotto, aged Comté. Asian: miso-glazed black cod, Hainanese or soy-poached chicken, Thai coconut curry (milder), grilled scallops with ginger-sesame.
Production Method
Hand-picked fruit; whole-berry/basket-pressed (only a portion of juice used), wild-yeast fermentation, matured on lees (~7 months) in older French oak (small % new) or ceramic eggs; some releases include extended skin contact for texture.
