Tasting Note
Golden stone fruit, spiced pear, dried lime, green almond, rooibos and saline minerality. Rich, savory texture with phenolic grip, subtle acidity and a long saline finish.

Food Pairing
Western: roast chicken with herb beurre blanc, grilled scallops, creamy seafood pasta, aged cheddar. Asian: miso-glazed black cod, Thai green curry (milder versions), soba with sesame and grilled mushrooms, soy-butter prawns.

Production Method
Hand-picked and basket-pressed; free-run retained. No sulphur or acid added; controlled oxidation; wild yeast fermentation in French oak puncheons (30% new). Aged 8 months on lees with monthly bâtonnage. Certified organic and biodynamic.
