Tasting Note
Fragrant, textural Roussanne: quince, nashi pear, stone fruit, lemon pith, white pepper, beeswax and toasted almond with saline minerality, rich mid‑palate and bright chalky acidity.

Western: roast pork, herb‑crusted chicken, grilled white fish, creamy pasta, aged Comté or sheep’s‑milk cheeses. Asian: miso‑glazed cod, Thai green curry, tandoori lamb, tempura prawns, soy‑ginger glazed scallops.

Production Method
Hand‑picked, basket‑pressed; wild‑yeast ferment in French oak puncheons (25% new); ~10% extended skin contact; matured on lees 5 months with monthly stirring; no acidification, sulphur added post‑fermentation.
