Tasting Note
Pale straw with green hues. Stone fruit, pear, honeyed citrus, white flowers, almond and spice. Creamy, textural palate with bright acidity and a long hazelnut-tinged finish.

Roasted chicken with herbs, pork belly, creamy pasta (carbonara), grilled scallops, lemony fish tacos; Asian: miso-glazed black cod, tempura prawns, Thai coconut curry (mild), sushi and sashimi.
Production Method
Hand-picked fruit; 43% skin contact (112–121 days) on portions of Grenache Blanc and Roussanne. Remaining batches whole-bunch basket pressed; fermented and matured exclusively in large ceramic eggs. Unfined/unsettled; minimal sulphur added after fermentation. Bottled Nov 2021.
