Tasting Note
Perfumed and floral with bright red cherry and raspberry, hints of spice and earth. Medium-bodied with sandy, fine-grained tannins, fresh acidity and a long, elegant finish.
Food Pairing
Western: roast lamb, slow-roast pork, charcuterie, mushroom risotto, grilled vegetables. Asian: Peking duck, char siu, Korean BBQ (bulgogi), mildly spicy Sichuan pork, teriyaki salmon.
Production Method
Hand-picked from dry‑grown 1946 bush vines; 50% whole berries, cold‑soaked 5–6 days, wild-yeast open fermentation; matured ~10 months in older French oak; unfined, light filtration. Certified organic/biodynamic.
