Tasting Note
Perfumed rose petals, wild strawberries and crushed raspberry with hints of star anise, tea leaf and mountain herbs. Medium-plus body, focused acidity, supple tannins and a long, savory finish.

Food Pairing
Western: roast lamb, pork belly, duck confit, aged cheddar, charcuterie, grilled vegetables. Asian: Peking duck, char siu, Korean BBQ (bulgogi), miso‑glazed eggplant, spicy Sichuan aubergine, grilled shiitake with soy/mirin.

Production Method
Hand-picked from 1946 bush vines; 50% whole berries retained; wild-yeast fermentation with gentle pump-overs and variable extended maceration; no pressings used; matured in old French/Austrian puncheons, foudre, ceramic eggs and amphora. Certified organic/biodynamic.
