Tasting Note

Perfumed red fruits (raspberry, cherry), anise and dried flowers with a stony/savoury edge, firm grainy tannins and a bright, long finish.

Western: roast duck, roast lamb shoulder, pork belly, charcuterie, aged Manchego or Gouda. Asian: stir‑fried mushrooms with soy/ginger and egg noodles, char siu, Korean BBQ, Sichuan‑style aubergine.


Production Method

Hand‑picked from 1946 bush vines; bunch‑sorted, ~50% whole berries, wild‑yeast open ferments with gentle pump‑overs; macerations ~21 days (some extended), no pressings; matured in old French oak foudre/puncheons, ceramic eggs and amphora. Certified organic/biodynamic.
