Tasting Note

Perfumed red-fruit (raspberry, cranberry) with violet florals, light spice and bright acidity. Silky texture, low-medium tannins and a fresh, lively finish (medium length).

Roast duck, duck pancakes with hoisin (Asian), roast pork or lamb, grilled mushroom risotto, charcuterie, Korean BBQ, Cantonese roast duck, braised pork belly.


Production Method

Each variety fermented separately; destemmed and sorted, ~50% whole berries, open fermenters, 14–18 days on skins, wild yeast ferment, matured in older French oak for ~7 months, bottled Dec 2021.
