Tasting Note
Concentrated dark berry and plum core with violet, black pepper, liquorice and ironstone minerality. Silky, sinewy tannins, savory spice and dark chocolate notes; bright acidity and a long, perfumed finish.

Western: grilled ribeye, lamb chops, barbecued spare ribs, braised short ribs, aged cheddar or manchego. Asian: Korean BBQ (bulgogi/galbi), char siu pork, Sichuan beef stir‑fry, hoisin duck, teriyaki beef, beef satay.

Hand‑picked (21 Mar), 20% whole‑bunch, 30% whole berries, open fermenters, ~21 days on skins, wild yeast, no pressings; ~16 months in 1‑year‑old foudre. Certified organic/biodynamic.
