Tasting Note
Dense black and blue fruits (plum, blackberry), violet and pepper florals, cured-meat/sanguine and saline iron minerality; framed by cedar and spice, with firm, fine-grained tannins and a long savory finish.

Food Pairing
Western: grilled steak, roast lamb, beef bourguignon, barbecued spare ribs, aged hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Chinese char siu or roasted duck, Sichuan-style beef, teriyaki beef skewers, rich Japanese yakiniku.

Production Method
Hand-picked single-vineyard fruit (Block 15); 25% whole-bunch, wild-yeast open ferments, ~16 days on skins, no pressings; aged in French oak puncheons (35% new) and finished in a 25hL foudre; bottled Sept 2020.
