Tasting Note

Concentrated dark-fruit core of blueberry, black plum and blackcurrant with ironstone minerality, dried herbs, anise and warm spice. Full-bodied, finely grained but powerful tannins, savory minerality and a long, persistent finish.


Food Pairing

Western: chargrilled ribeye, roasted lamb, venison, mushroom ragù, aged hard cheeses. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan pepper beef, Malaysian beef rendang, teriyaki-style grilled beef.


Production Method

Hand‑picked from Block 15; 25% whole-bunch, cold soak, open fermenters and wild-yeast fermentation; no pressings. Aged ~15 months in 35% new French oak and 65% older French oak. Bottled October 2019.
