Tasting Note

Bright pear, green apple and quince with lemon zest, honeyed stone-fruit, chalky minerality and gentle pastry spice. Creamy mid-palate, crunchy natural acidity and a clean, chalky finish.

Western: tempura oysters, grilled sea bass, roast chicken, creamy goat cheese; Asian: wakame/ponzu, sushi/sashimi, Vietnamese spring rolls, mildly spicy Thai green curry.


Production Method

Hand‑picked fruit; whole‑bunch and basket pressing; fermented in ceramic eggs and older French oak with minimal sulphur additions; matured on lees 4–6 months; light filtration or unfined bottling.
