Tasting Note
Concentrated blackberry, black cherry and plum with cedar, tobacco, dark chocolate, anise and baking spice. Fine-grained tannins, balanced acidity, full-bodied and very long, with savory olive tapenade and oak spice on the finish.

Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), Indonesian beef rendang, Cantonese char siu or roast duck, spicy Sichuan beef.

Production Method
Hand-harvested Barossa fruit blended (53% Cabernet/47% Shiraz); matured 19 months in French barriques and Hungarian hogsheads (23% new oak); bottled under natural cork.

Yalumba is Australia’s oldest family-owned winery (founded 1849, Hill‑Smith family). The Signature is sourced from long‑established Barossa vineyards (average vine age ~49 years) and is part of Yalumba’s Rare & Fine range.
