Tasting Note
Perfumed red and black fruits (strawberry, dark cherry) with violet/dried-rose, cocoa, menthol/herbal and sweet spice. Smooth, refined tannins, bright acidity and a long, savory finish with cedar and licorice notes.

Western: roast lamb, grilled ribeye or steak, mushroom risotto, aged cheddar. Asian: Peking duck, char siu, Sichuan-style beef or mapo tofu (moderate spice), Cantonese roasted meats, braised lamb skewers.

Production Method
Hand-harvested single-vineyard Cabernet Gernischt; fermented in temperature-controlled tanks and matured ≈12 months in oak (predominantly French with some American oak); bottle-aged before release.

Xige Estate (西鸽酒庄), founded by Zhang Yanzhi in 2017, is a large, high-tech Ningxia estate focused on single-vineyard wines and revival of Cabernet Gernischt from old vines in the Dove Mountain/Qingtongxia area.
